Please define your idea of jazz, Link. It's important to remember that jazz can refer to style, as well as chords. One can use jazz chords without swing or improvisation. That being said, it's funny that the Mario theme's been mentioned...I've tried adding 7ths to each chord in it before (on piano), with interesting results. I've done the same for Dear Friends, from Final Fantasy V. I've never transcribed any of my piano arrangements, but I play around with stuff like that for fun anyway.
I think my lack of presence lately demonstrates how busy I've been with the end of the semester and professional arranging projects...but I'm glad I saw this thread. I'd love to contribute sometime in the near future. Whatever the specifics are, this is a great idea.

What I mean by Jazz is pieces characterized by swing rythems, jazz harmony chords, free form passages using jazz techniques.
If your still wondering at what I'm going for try listening to some pieces by Vince Guaraldi. The Final Fantasy Piano Collection had a few jazz arrangements like Cinco de Chocobo (VII) and Chocobo-Chocobo (IV)
Those are the sounds I'm going for.

Why do you say that? I have nothing against non-piano arrangements, but I think that a Piano Solo Jazz collection of game music would be very interesting and unique.
And by classic, I mean music that is well known, or not so well known but deserves to be. Especially things from past gaming era. Think Mario, Zelda, Pokemon, Final Fantasy, F-Zero, Sonic The Hedgehog, etc. as well as things like Mother, Tales of..., Breath of Fire, Harvest Moon, Fire Emblem, Secret of Mana, Sim City, Mega Man, Mystical Ninja, Shining Force, Phantasy Star, etc. It needs to be a good blend of songs from games all the way from the NES days until now. I don't mean that we need to stick by "The Standards" like The Chocobo Theme, The Mario Theme, The Zelda Theme, etc.
We want a range of selections from the obvious (Mario Theme, Zelda Theme, etc.) to the not so obvious, like: Dr. Wright's Theme (Sim City), Color of the Summer Sky (Secret of Mana), The New Years Fesitval or The Waltz (Harvest Moon), things that people will go, HEY! I remember that!

How? 99 percent of the arrangements on this site are for piano, and you say it would be unique? I personally can make a way better arrangement for a jazz band than I can for piano.

The point of a piano collection is to have piano solo arrangements. I don't deny that using solo piano is rather typical, but if you'd like you could easily go ahead and start arranging for jazz band outside of this project. I'd actually do it myself as well, but I don't know nearly enough about jazz bands to produce anything affable enough.

@JrvUnleashed: Make a song for a jazz band cause I would love to hear it.  . I think that 99% is a bit exaggerated. When The-Real-Link talks about uniqueness, he is talking about JAZZ arrangements, not piano arrangements. I do find that approaching a solo piano arrangement is much more attainable than making a jazz arrangement. But yeah. Make a jazz band arrangement.

@Joseph: Of course Shining Force! I've done several arrangements for solo piano from that game. (the first one)
@Jrv: I'm not saying that you shouldn't do Jazz Band arrangements. I highly encourage it. I was just proposing, as Nicol said, a Piano Collection type project.

I think that a piano collections type one would be better. The quality of performance would be way better. And if it's really really good, it could be as popular as Overclocked Remixe's - FF7 Voices of the Lifestream
